It was from a cloth merchant that, in what was then called 'Via dei lanaioli' and is now Via dei Tavolini, Pietro Paoli rented a room on the ground floor to open his pizzicheria. It was 1827: thus began the history of the oldest restaurant in Florence, still known today for the love with which it protects the most authentic recipes of Tuscan tradition. In 1909 it was entirely renovated in neo-Gothic style, thus giving life to the structure that we can still see today. The frescoes painted by Carlo Coppedé and inspired by the Decameron date back to 1916, while the Cantagalli ceramics on the walls bear all the coats of arms of the Tuscan municipalities. Paoli's guest book counts more than a thousand pages: among the many signatures are those of Puccini, Leoncavallo, Pirandello, Marinetti and Charlie Chaplin. 1827
